How to prepare courgette cream 

  1. Cut the onion into julienne strips and fry it in a pan with a little EVOO. If you want, you can add a peeled clove of garlic. Leave the onion to cook over a low heat.
  1. Chop the unpeeled courgettes. Then peel the potato and cut it into pieces. When the onion is soft, add them to the casserole. Leave to fry, stirring frequently, for 10 minutes.
  1. Add the vegetable stock and leave it all in the pan for 20 minutes. After this, puree it with a blender.
  1. Add the cream back to the pan, add salt and pepper to taste. Add the cream so that the texture of the puree is not too thick. Leave to cook for a further 5 minutes and it is ready to serve!

Expert tip: If you are going to prepare this cream for guests and you want the colour to be intense and to catch the eye as soon as you see it, add a bit of courgette skin. The green is stronger, just wash the skin well.
